Red Lipstick
Ingredients
- 60 ml Ólafsson Gin
- 30 ml Beetroot Syrup
- 30 ml Fresh lime juice
- Dried beetroot
- Skyr, unflavored
Method
Shake all ingredients with ice. Double strain in a rock glass filled with ice. Garnish with dried beetroot topped with a dollop of skyr.
Beetroot syrup: Bring 1 cup sugar, 1 cup water, and 1 cup chopped beetroots to a boil and then remove from heat. Let sit at room temperature for at least 30 minutes. Strain and refrigerate for up to 2 weeks.
