30 ml (1oz) Ólafsson Gin
15 ml (1/2oz) Freshly squeezed lemon juice
15 ml (1/2oz) Simple syrup
Champagne (or sparkling wine)
Shake Ólafsson Gin, lemon juice, and simple syrup with ice. Pour ingredients into a flute glass. Top with champagne and garnish with lemon peel.
