Ingredients

30 ml (1oz) Ólafsson Gin ⁠
15 ml (1/2oz) Freshly squeezed lemon juice⁠
15 ml (1/2oz) Simple syrup ⁠
Champagne (or sparkling wine)⁠
Lemon peel ⁠

Method

Shake Ólafsson Gin, lemon juice, and simple syrup with ice. Pour ingredients into a flute glass. Top with champagne and garnish with lemon peel. ⁠
